Tepache is a drink from Mexico that’s made by fermenting the skin and core of a pineapple in sugar water (the sugar is typically piloncillo), sometimes with the addition of spices or other flavors. Fermentation happens naturally because of the wild yeast and bacteria present on the fruit’s skin.
