Quite a long time ago, circa 2005, I started a nuka bed, and used it for a while before a vacation followed by neglect produced a moldy surface and I terminated the experiment. Several weeks ago, after many years of fermentation experimentation and gained experience, I started a new one. I missed the distinctive funk of the nuka pickles which are less lacto and more, I don't know, nutty? than brine-pickled vegetables. Both are good, but nukazuke are definitely their own thing.
